I used to ruin broccoli all the time. Either I boiled it until it turned dull green and sad, or I left it undercooked and crunchy in a bad way. For a long time, it was just a vegetable I tolerated, not something I actually wanted to eat.
Then I tried grilling it. That changed everything.
What I figured out is that broccoli needs heat and flavor that actually sticks to it. The grill does the first part—char, smoke, and texture. Then the garlic honey mixture handles the rest. Parmesan at the end is basically non-negotiable because it pulls everything together.
Here’s the thing: broccoli on the grill sounds like it might fall apart or dry out, but if you cut it into decent-sized florets and don’t overthink it, it holds up really well. The edges get crispy and slightly burnt in spots, which is exactly what you want.
I usually toss it with olive oil, salt, pepper, and minced garlic before it even hits the grill. Then while it’s cooking, I brush on a mix of honey and a little soy sauce for that sweet-salty glaze. I learned quickly that if you add the honey too early, it burns too fast, so timing matters here.
The first time I made this, I left it on the grill too long and it went from “nice char” to “why does this taste like smoke regret.” After a few tries, I learned to keep it moving and pull it off as soon as the edges crisp up.
Once it comes off the grill, I finish it with Parmesan and a squeeze of lemon. That last step is what makes it feel complete instead of just grilled vegetables.
This works as a side for basically anything off a grill—chicken, burgers, even just bread if that’s all you’ve got.
