I used to think carrots were just one of those “healthy side dishes” people put on a plate because they had to, not because they actually wanted to eat them.

Mine usually came out either too plain or slightly burnt on the edges and still hard in the middle. Not exactly exciting food.

That changed when I started grilling them instead of just roasting them.

The first time I tried this honey brown sugar glaze, I went a bit too far with the sugar and ended up with carrots that were basically candy. Not terrible, but definitely too sweet to serve with anything savory. After that, I adjusted it until it actually made sense.

What makes this work is the glaze. Honey, brown sugar, butter, and a little orange juice melt together into something that sticks to the carrots and caramelizes on the grill. It’s not subtle, but that’s the point.

Here’s the thing: carrots need heat and time. If you rush them, they stay crunchy in the middle and the glaze just burns on the outside. I learned that the hard way the first few times when I pulled them off too early thinking they were done.

Now I either par-cook them slightly or cut them evenly so they all cook at the same speed. That one change fixed most of my issues.

Grilling them instead of just baking adds a smoky edge that balances the sweetness. Without that, the glaze can feel too heavy.

I usually brush on the glaze near the end so it doesn’t burn too fast. The first time I added it too early, I basically turned the grill into a sticky mess and had to clean it for way too long afterward.

This is one of those side dishes that surprises people. It looks simple, but it ends up being the thing everyone talks about at the table.

Sweet and smoky grilled carrots coated in a honey brown sugar glaze for an easy BBQ or holiday side dish.

Ingredients
  

  • 1 lb carrots peeled and cut lengthwise
  • 1 tbsp olive oil
  • 1/8 tsp salt
Glaze:
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tbsp butter
  • 1 tbsp orange juice
  • 1/4 tsp cinnamon

Method
 

  1. Preheat grill to medium heat and lightly oil grates.
  2. Toss carrots with olive oil and salt until evenly coated.
  3. Grill carrots, turning occasionally, until they start to soften and develop grill marks, about 12–15 minutes.
  4. In a small pan, melt butter and stir in honey, brown sugar, orange juice, and cinnamon until smooth and slightly thickened.
  5. Brush glaze onto carrots during the last 5 minutes of grilling, turning once to coat evenly.
  6. Remove from grill and serve warm.

Notes

Don’t add glaze too early or it will burn. Cut carrots evenly so they cook at the same rate. If carrots are thick, par-boil for 5 minutes before grilling. Best served fresh while glaze is sticky and warm.
