I first had bang bang chicken at a small takeout spot where everything was fried and drenched in sauce. It was good, but also kind of heavy. I remember thinking there had to be a way to get the same flavor without all the oil and mess.

Here’s the thing: skewers help more than people realize. They keep the chicken from drying out in the air fryer because the pieces cook more evenly. I tried doing it with loose chunks at first, and they came out uneven and a bit dry in spots.
I usually marinate the chicken briefly with basic seasoning—salt, pepper, paprika, garlic powder. Nothing fancy. Then I thread it onto skewers and air fry until the edges get a little crisp but the inside stays tender.
The first time I made the sauce, I went too heavy on the mayo and it drowned everything. After a few tries, I balanced it out with sweet chili sauce and a little hot sauce so it actually had some bite.
The biggest mistake I made early on was adding the sauce before cooking. Don’t do that. It burns in the air fryer and turns into a sticky mess you don’t want to deal with.
Now I cook the skewers first, then coat them right after while they’re still hot so the sauce clings properly.
These are fast enough for a weeknight but also work as an appetizer when people come over. I’ve even eaten them straight from the fridge cold the next day, and they still hold up.
