Easy Peach Galette with Flaky Hand-Crust

Ingredients
  

Crust
  • 2 cups all-purpose flour plus extra for rolling
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon fine salt
  • 8 tablespoons unsalted butter frozen and grated (about 4 ounces)
  • 5 to 6 tablespoons ice water
Filling
  • 2 pounds ripe but slightly firm peaches about 4–5 medium, pitted and sliced 1/4-inch thick
  • 1/3 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • 2 tablespoons almond flour or fine polenta to sprinkle under the fruit
Finishing
  • 1 large egg beaten with 1 teaspoon water egg wash
  • 1 tablespoon coarse sugar turbinado for sprinkling
  • 2 tablespoons apricot jam warmed (optional, for glazing)

Equipment

  • 1 9- or 10-inch rimmed baking sheet
  • 1 Box grater (or sharp knife to chop cold butter)
  • 1 Rolling pin
  • 1 Parchment paper

Method
 

Prepare the crust
  1. Grate chilled butter on the large holes of a box grater and toss with flour, sugar, and salt until coated; sprinkle ice water a tablespoon at a time and mix until dough holds when squeezed, forming a shaggy dough.
  2. Form the dough into a 6-inch disk, wrap tightly, and chill at least 20 minutes (or up to 48 hours).
Make the filling
  1. Slice peaches and combine in a saucepan with sugar, lemon juice, vanilla, and cornstarch; warm over medium-low until sugar dissolves and juices thicken slightly, 3–5 minutes, then remove from heat and cool briefly.
Assemble
  1. Preheat oven to 400°F and line a baking sheet with parchment. Roll the chilled dough to a 12-inch circle on a lightly floured surface and transfer to the parchment-lined sheet.
  2. Sprinkle almond flour or polenta in the center leaving a 2-inch border; arrange cooled peach slices in overlapping circles on top of the almond flour.
  3. Fold the 2-inch border up over the fruit in pleats, pressing gently to seal, and brush the dough edge with egg wash; sprinkle coarse sugar over the crust.
Bake and finish
  1. Bake at 400°F for 35–45 minutes until the crust is deep golden and filling bubbles gently; rotate the pan once if needed for even browning.
  2. Let cool on the sheet for at least 20 minutes; brush exposed peaches with warmed apricot jam if desired before slicing and serving.

Notes

Use very cold ingredients and chill the dough to keep the crust flaky. Briefly cooking the peaches concentrates juices and reduces sogginess. Store at room temperature up to 24 hours or refrigerated up to 3 days; reheat slices in a 350°F oven for 8–10 minutes to refresh the crust.
