Method
- Preheat oven to 425°F (220°C).
- Brush flatbreads lightly with olive oil and spread a thin layer of apricot jam.
- Add goat cheese evenly over the surface.
- Scatter blueberries across the flatbread.
- Bake for 12–15 minutes until edges are golden and cheese is softened.
- Remove from oven and drizzle with honey while warm.
- Finish with fresh mint and slice to serve.
Notes
Don’t overload with jam or the base will get soggy. Add honey after baking to keep flavor clean and balanced. Best eaten fresh for maximum crispness.
