- In a bowl, mix olive oil, lime juice, chili powder, smoked paprika, cumin, oregano, brown sugar, cilantro, salt, and pepper.
- Add chicken and coat evenly with marinade.
- Let marinate for 20–30 minutes (or longer if preferred, not exceeding a few hours).
- Heat a grill pan or skillet over medium-high heat.
- Cook chicken for 5–6 minutes per side until fully cooked and lightly charred.
- Remove from heat and let rest for 5 minutes before slicing.
Notes
Do not over-marinate in lime-based mixtures or texture may soften too much. Avoid overcrowding the pan for proper browning. Resting the chicken is essential for juiciness.
