Prep Time 15 minutes
Cook Time 12 minutes
Servings: 2 servings

Ingredients

  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Mango Salsa:
  • 1 ripe mango diced
  • 1 small tomato diced
  • 1/4 red onion finely chopped
  • 2 tbsp cilantro chopped
  • 1 lime juiced
  • pinch of salt

Method

  1. Season salmon fillets with olive oil, salt, and black pepper.
  2. Heat a pan over medium-high heat or preheat oven to 400°F (200°C).
  3. Cook salmon for 10–12 minutes until golden and flaky, flipping once if pan-searing.
  4. In a bowl, combine mango, tomato, red onion, and cilantro.
  5. Add lime juice and a pinch of salt, then mix gently.
  6. Spoon mango salsa over cooked salmon and serve immediately.

Notes

Do not overcook salmon or it becomes dry quickly. Add lime juice at the end to keep salsa fresh. Best served immediately while salmon is warm and salsa is cool.
