Everyone Loves These Lemon Feta Potatoes

Crispy roasted potatoes tossed with lemon, herbs, and feta cheese for a simple Mediterranean-style side dish.

Ingredients
  

  • 2 lbs baby potatoes halved
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 lemon juiced and zested
  • 3/4 cup feta cheese crumbled
  • 2 cloves garlic minced, optional
  • Fresh thyme optional for garnish

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with olive oil, oregano, thyme, garlic, salt, and pepper.
  3. Spread potatoes on a baking tray in a single layer without overcrowding.
  4. Roast for 35–40 minutes, flipping once halfway through, until golden and crisp.
  5. Remove from oven and immediately squeeze over fresh lemon juice and zest.
  6. Sprinkle crumbled feta over hot potatoes and gently toss.
  7. Finish with a drizzle of olive oil and serve warm.

Notes

Don’t add feta before roasting or it will dry out. Always use fresh lemon for the best flavor. Spread potatoes out properly or they’ll steam instead of crisping. Best served immediately while edges are still crispy.
