Method
- In a bowl, mix salsa verde, olive oil, lime juice, cumin, salt, and black pepper.
- Add chicken and marinate for at least 30 minutes.
- Preheat grill or grill pan to medium-high heat.
- Grill chicken for 5–6 minutes per side until cooked through.
- Place pepper jack cheese slices on chicken during the last minute and cover to melt.
- Remove from heat and top with fresh cilantro and lime juice.
- Serve immediately.
Notes
Do not over-marinate or the chicken texture can become mushy. Cook thin chicken quickly to avoid drying it out. Melt cheese at the very end for best texture and flavor balance.
