Easy Greek Chicken Dinner Recipe

Ingredients
  

  • 2 pounds chicken thighs or chicken breasts
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 4 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon sliced
  • 6 oz feta cheese cubed or crumbled
  • 1 tablespoon chopped fresh parsley optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss chicken with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Arrange chicken and lemon slices in a baking dish.
  4. Bake for 35–40 minutes until chicken is cooked through and golden.
  5. Add feta cheese during the last 5 minutes of baking.
  6. Broil 1–2 minutes if desired for crispier edges.
  7. Let rest 5 minutes before serving.

Notes

Chicken thighs stay juicier, but breasts work if cooked carefully. Add feta near the end so it keeps its texture. Store leftovers refrigerated up to 4 days.
