Easy Cowboy Caviar in 20 Minutes

A fresh and colorful mix of beans, vegetables, and tangy dressing, perfect as a dip, salad, or side dish.

Ingredients
  

  • 1 can black beans drained and rinsed
  • 1 can black-eyed peas drained and rinsed
  • 1 cup corn fresh, canned, or frozen and thawed
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 1 cup cherry tomatoes chopped
  • 1/4 cup fresh cilantro chopped
For the dressing:
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Drain and rinse beans thoroughly.
  2. Chop all vegetables into small pieces.
  3. Combine beans, corn, peppers, onion, tomatoes, and cilantro in a bowl.
  4. Whisk olive oil, lime juice, vinegar, salt, and pepper.
  5. Pour dressing over mixture and toss well.
  6. Let sit 20–30 minutes before serving.

Notes

Best served after resting to allow flavors to blend. Store in fridge up to 3 days. Adjust vegetables based on preference.
