Easy 4th of July Cookie Cake in Under 40 Minutes

A soft and chewy sugar cookie cake loaded with M&Ms, sprinkles, and frosting—perfect for 4th of July and summer parties.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup red white, and blue M&Ms
  • 1/4 cup sprinkles red, white, blue
  • 1/2 cup frosting store-bought or homemade

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch round pan or line with parchment.
  2. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in egg and vanilla until fully combined.
  4. In a separate bowl, whisk flour, cornstarch, baking soda, and salt.
  5. Add dry ingredients to wet mixture and mix until just combined.
  6. Press dough evenly into prepared pan.
  7. Top with M&Ms and sprinkles, gently pressing them into the dough.
  8. Bake for 16–20 minutes until edges are golden and center looks slightly underdone.
  9. Cool completely, then decorate with frosting if desired and slice.

Notes

Don’t overbake or it will lose its soft center. Let it cool fully before slicing for cleaner pieces. Store covered at room temperature for up to 4 days.
