Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potatoes with olive oil, salt, and pepper until evenly coated.
- Roast potatoes for 25–30 minutes, flipping halfway, until golden and crisp.
- Add chopped bacon to the tray and roast for another 10–12 minutes until bacon is crispy.
- In a small bowl, mix honey with olive oil or bacon drippings.
- Remove potatoes from oven, drizzle honey glaze over them, and toss gently before serving.
Notes
Don’t add honey too early or it will burn. Avoid overcrowding the pan or potatoes won’t crisp. Bacon can be pre-cooked slightly if you prefer less grease in the oven. Best served fresh while still crispy.
