Creamy Tomato Tortellini Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium yellow onion diced (about 1 cup)
  • 2 medium carrots peeled and diced small (about 1 cup)
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 28-ounce can crushed tomatoes
  • 1/4 cup sun-dried tomatoes chopped (packed in oil and drained) or 1 tablespoon extra tomato paste
  • 3 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes optional
  • 1 bay leaf
  • 3/4 teaspoon kosher salt plus more to taste
  • 1/2 teaspoon black pepper
  • 12 ounces refrigerated cheese tortellini one package
  • 1/2 cup half-and-half or 1/3 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan for serving optional
Optional additions
  • 8 ounces cooked shredded rotisserie chicken optional
  • 2 tablespoons chopped fresh basil optional

Equipment

  • 1 4- to 6-quart Dutch oven or heavy pot
  • 1 Large pot for boiling tortellini
  • 1 Immersion blender or countertop blender (optional)
  • 1 Wooden spoon or heatproof spatula

Method
 

Prepare the base
  1. Heat olive oil in a 4- to 6-quart Dutch oven over medium heat. Add diced onion and carrots and sauté until softened and slightly golden, about 6–8 minutes.
  2. Stir in garlic and cook 30–45 seconds until fragrant, then add tomato paste and cook 1 minute.
  3. Pour in crushed tomatoes, chicken broth, and add chopped sun-dried tomatoes or extra tomato paste. Stir to combine.
Simmer and season
  1. Add dried oregano, dried basil, crushed red pepper (if using), bay leaf, salt, and pepper. Bring to a gentle simmer and cook, partially covered, for 12–15 minutes. Remove and discard the bay leaf.
  2. Optional: Use an immersion blender to smooth the soup or carefully transfer half to a blender and puree, then return to the pot.
Cook the tortellini
  1. While the soup simmers, bring a large pot of salted water to a boil. Cook the cheese tortellini according to package directions minus 1 minute (slightly undercooked). Reserve 1/2 cup pasta cooking water, then drain tortellini.
Finish and serve
  1. Stir half-and-half and chopped parsley into the hot soup off a vigorous boil; taste and adjust seasoning. Add drained tortellini and gently fold to combine, using up to 1/4 cup reserved pasta water to loosen the broth if needed. Heat through for 1–2 minutes and serve with grated Parmesan.

Notes

Cook tortellini separately and add at the end to avoid a gummy texture; reserve pasta water to adjust the broth. For a vegetarian version, use vegetable broth and add a teaspoon of soy sauce or miso for more depth. Freeze the soup base (without tortellini or dairy) for up to 3 months and add freshly cooked tortellini when reheating.
